Picked at the peak of ripeness, when the wild plums turn deep crimson. Red Tkemali is fuller, fruitier, and a touch sweeter — but still unmistakably tart. Think of it as the cool older sibling to ketchup.

Pairs equally well with steak, lamb, hard cheese, and a slice of dark bread.
